I’d love to see them come back but only for special events like Fundays. For example, one can of Freddy, Franny, or Proto as a special character in each Fundays box would be cool.

I'd love to see Sodas come back, but they'd definitely need to make some changes to their sales model!
-limited editions, not every character from every movie or tv show
-sell them online only, don't give people a chance to open them in store and ruin the fun
-no open editions of sodas. limited runs only!
And maybe make the cans thinner / recyclable? I don't feel guilty tossing a box from a mystery mini, I shouldn't feel guilty recycling a soda can!

I don't miss Sodas, their form factor wasn't for me, and the cans were a great gimmick, but trying to display or store them was a nightmare. And the way you'd find them opened and checked at retail stores was really annoying. I appreciate that you like them. Personally I miss Pint Size Heroes. Loved those, some people didn't. I was waiting for a Teen Titans Go line of pint size heroes my friend showed me on his Toys R Us upcoming product listings. But they never happened.
You mention the pokemon in sodas. That IS happening, just not from Funko. I just got back from a trip to Taiwan, and at a Don Quijote, I snapped a pic of these:
