I think scoring at retail is gunna depend on the pack count... could very easily go either way imo

Usually can kinda tell by royalty and the expectation of 12-15 epics or so. Royalty at 2500 pieces

I am new to NFT and was hoping some questions can be answered because I'm a huge TMNT fan! I have never bought into the NFT, does each pack only have 1 card? Are these the only cards in a "set" or are these the chases? And by redeemable meaning u get the physical pop? I have way too many questions which is why I never made the jump. Also how do u know it's redeemable?

I would look up Sully and his Nerds United YouTube channel, he has a lot of great info about the NFTs. But to answer your questions:

1) There are two types of packs usually (the Funime had a third type but this won't so I am not going to mention it.) Standard packs are $9.99 and have 5 cards. Premium packs have 17 cards and are $29.99.
2) There are four levels of base cards - common, uncommon, rare, and epic. None of those cards on their own are redeemable, but if you collect them all you get royalty, and that gets you the physical royalty Pop. Most of the time that's a Freddy Funko but not always.
3) There are four levels of redeemable NFTs. Legendary, Grail, Ultra, and Mythic. Only one set so far (the Funime I mentioned before) has had a Mythic, so we will skip that. Grails are usually limited to 999. Legendaries are more common and usually between 1500 and 2500 although they have been more and they have been less. Ultra is a 5000 piece redeemable so it's easier to get and less expensive. Not every set has an Ultra - so far only three of them have (Scooby Doo 2, Disney afternoon, and Rick & Morty). You will know they are redeemable based on the card type.

It's one of the best royalties they have ever made - the only ones I will say are better are the Megazord and Grimlock.
